2 tablespoons vegetable or other neutral oil, divided

1/2 cup finely diced yellow onion

1/4 cup finely diced green bell pepper

1/4 cup finely diced celery

2 medium cloves garlic, minced

1/2 pound ground pork, beef, or spicy breakfast sausage

1/2 pound chicken or poultry liver (pureed in food processor)

2 cups chicken stock

1 teaspoon Ground Black Pepper Cafe Style

1 teaspoon of Salt-Free Vegetable Herb Seasoning
Dirty Rice
Directions
Red Fish
Melt 2oz butter
Dip fish in butter
Liberally coat fish in Wildlife Seasonings Alligator Bayou Cajun Seasoning
Cook fish in extremely hot pan with remaining butter and oil
Dirty Rice
In a pan or pot, at a low temp, add oil, soften (not brown) onion, pepper and celery for 3 minutes. Covered.
Add ground meat and cook lightly
Add all seasonings and rice
Add chicken stock and bring to a boil
Remove from heat. Cover tightly and place in a 350-degree oven for 16 minutes
Remove from oven
Cover and let stand for 15 minutes
